As part of our ongoing commitment to provide both high quality supplies and services to the Australian wine industry, we have developed a new division within EnolTech Australia to specifically service sparking wine production for our clients.
Our research shows a growing trend amongst wineries to offer a sparking wine as part of their range / portfolio. Production of hand crafted “méthode champenoise” style wines are complex, time consuming and require a specialist level of wine making expertise and equipment, not generally available to smaller production units.
Several contract winemakers provide an excellent service to this growing area of interest, and this is where we may be able to assist your winery. Our world wide winery supply contacts give us access to the latest European yeast strains and fining agents to further improve the quality aspects of Australian sparkling wine.
Caroline Vale is a principal of our Company and has spent a number of years working in this specific area of wine production and will now head up a small, specialist unit known as “Mousse & Bead” which will operate as a contract sparking wine consultancy and winemaking facility specialising in small run production of premium sparkling wine made in the “méthode champenoise” format.
Specialist small scale production equipment is, or has been installed at our small production facility on the Mornington Peninsula to service clients in that area and beyond.
Production can be tailored to suit the individual requirements of each client and may include production of base wines for conversion to sparking, processing of base wines produced off site into sparking wine. Blending of wines, filtration and preparation of wines for Tiraging, maturation “on lees”, disgorging, labeling and packaging ready for sale.
